The fruit comes from Can Rius, a single plot in Peneds at roughly 185 245 meters of elevation, and the wine is aged in bottle for a minimum of 36 months. The result is a polished, food friendly Cava with the breadth of a serious Chardonnay and the bracing freshness Penedes does so well.
